Absinthe Barrel Cut Shiraz Cask

Absinthe Barrel Cut Shiraz Cask combines the best of two worlds: Genuine premium Absinthe and the complex notes of a barrel-aged spirit. For the Shiraz Cask Edition, we use Shiraz wine alcohol as the base instead of a neutral grain spirit. This gives the Absinthe additional complexity and a slight fruitiness. In the next step, the Absinthe matures for several months in barrels that were previously used for Shiraz red wine.

Barrel Cut Shiraz Cask Absinthe takes the classic herbal profile of the “Green Fairy” and gives it a new depth – velvety, dark and intriguingly complex. Matured in a Shiraz red wine cask, this Absinthe abandons the light green freshness of tradition and immerses itself in an intense, almost meditative world of aromas.
Nose: Classic at first: fresh aniseed, fennel and wormwood – clear, precise, lively. Then things get exciting. Dried figs, raisins and a hint of roasted almonds emerge, accompanied by warm, oxidative notes reminiscent of old sherry.
Palate: No hint of fruity Shiraz – the barrel ageing is different here: mature, deep and intense. The taste goes in the direction of dried fruit – raisins, raisins, a hint of dried plum. More sherry than red wine. In addition, a soft, nutty warmth that harmonizes perfectly with the classic herbal heart.
Finish: Long, warm, with character. Dried fruits and subtle oak notes remain, accompanied by a pleasant sweet note of aniseed and fennel, wormwood lingers gently.
We recommend drinking Barrel Cut Shiraz Cask Absinthe in the classic way, but with a little less water. 1 part absinthe mixed with 1 to 1.5 parts ice-cold water, if desired also poured over a sugar cube. Be sure to smell the glass before diluting – this absinthe reveals its full aromatic power on its own. With water, it turns into a dense, reddish-brown white. The louche is particularly strong – thanks to the anisée finish, which brings even more essential oils into play. Expect a real spectacle in the glass.
The Barrel Cut Absinthe Project
Barrel Cut Absinthe was created in collaboration with the German SaarWhisky distillery. The team is known for its unusual Absinthes and single cask whiskies. Their many years of experience with barrel-aged spirits supported the development and realization of the Barrel Cut project. Further Absinthes are planned for the future. The idea is to offer various barrel-aged spirits under the name “Barrel Cut”. The base of the Absinthe will always be the same. The different flavor profiles will come from different barrels. So far, there are the Whiskey Cask and Shiraz Cask Editions.
